Christmas Questions & Answers

1. Wrapping paper or gift bags?
I like both but I like wrapped gifts the best!

2. Real tree or Artificial?
Artificial~ I would sneeze a lot with a real tree and my son's asthma would go bonkers!

3. When do you put up the tree?
Usually the week after Thanksgiving.

4. When do you take the tree down?
Usually the week after Christmas. I really don't like the tree up too long. I never have. I don't like clutter and sometimes feel like the tree is cluttering my livingroom.

5. Do you like eggnog?
Nope!

6. Favorite gift received as a child?
A play organ when I was about 9 years old and my Cabbage Patch doll when I was 11 years old.

7. Hardest person to buy for?
My inlaws.

8. Easiest person to buy for?
My children.

9. Do You have a nativity scene?
Yes...after all, isn't that what Christmas is about?!

Mail. I prefer getting a "real" card too!

Honestly...I don't have a favorite..not much of a movie person.

Death Is Not Dying...

As this year draws quickly to an end I've been reflecting on all the many blessings and sorrows this year has held. With the death of Kara, our family experienced loss in a way that we had never felt or experienced it before. However, in the midst of all the grief, all the loss, all the pain that I was feeling, there was a constant joy that I can't explain other than to say that it was the Lord holding me up, giving me peace and reminding me that "death is not dying."

A few months after Kara's death I was driving the boys across town. The radio was on and I was listening to a testimony of a lady (Rachel Barkey) that had cancer on "Revive Our Hearts." What I heard playing that day has been a huge blessing to me. I just listened to it again a few days ago and felt that I needed to share Rachel's message. It's a message of hope, courage, and faith in the midst of the storm. I hope that you can carve out some time to listen, be blessed and be reminded that "death is not dying..." It's only the beginning of our eternal life with our Lord and Savior Jesus Christ!

Creamy Crab & Artichoke Dip

Creamy Crab & Artichoke Dip

1 package (8oz.) Crab Meat (fresh, frozen, imitation or canned will work in this recipe)
1 package (8oz.) Cream Cheese (room temperature)
1 cup mayonnaise
1/3 cup finely chopped Onion
1 can (13.75oz.) Artichoke Hearts (drained & chopped)
3/4 cup grated Parmesan Cheese

Preheat oven to 375 degrees. In a bowl, blend cream cheese and mayonnaise until smooth. Stir in remaining ingredients and place into a glass pie plate. Bake uncovered, for 15-18 minutes, until heated through and lightly browned. Serve with crackers or cocktail bread.

Easy Bake Oven Mix Recipes

I was so excited to find some recipes for Easy Bake Oven Mixes today. Emalee is still too young for an Easy Bake Oven, but I know that there may come a day that she might request that for her birthday or Christmas present. That's why I decided to post this recipe in my blog today...for my own future reference.

As a little girl I always loved baking with my mom. One of my fondest memories is baking pies with her. She would always save just enough crust and filling so that I could bake my own pie too. I'd put it in the little foil pot pie container and it was the perfect size to eat!
My sister's had a Holly Hobby oven and would bake cakes in it. If you've ever priced the Easy Bake Oven Mixes you know that they're kind of pricey for what they are. So here's a great frugal recipe for them. Enjoy!


Easy Bake Oven Chocolate Cake Mix~
1 cup of sugar
3 Tbsp. cocoa
1 1/2 cup flour
1 tsp. baking soda
1/2 tsp. salt
1/3 cup of vegetable shortening
In a medium bowl combine sugar, cocoa, flour, baking soda and salt. Cut in shortening until it resembles corn meal. Store in airtight container and use within 12 weeks.

To Use:
1 cup of mix
5-6 tsp. water
Mix together and pour into greased and floured pan. Follow Easy Bake Oven directions.


Easy Bake Chocolate or White Frosting~
2 cups powered sugar
3 Tbsp. dry milk
1/2 cup cocoa
6 Tbsp. vegetable shortening
In bowl, combine first three ingredients. Next cut in shortening. Store in airtight container. Use within 12 weeks.
*For white frosting omit the cocoa.

To Use:
1 cup of mix
2-2 1/2 tsp. water
Mix with a fork.

Doctors, Birthdays, preschool and Cooking...

I'll start out by saying that the St. Louis trip didn't go well. Brian and I could tell right away that the doctor I saw didn't really have much experience with Hypereosinophilic disorders. So, we decided to call it quits with him and look for other options.
There is a place in Cincinnati that specializes in this disorder and they have agreed to view my records and look at all the slides of any of my scopes I've had. After they look at all of that they'll call me and let me know if they'd like to see me. From the conversation I had with the head of their Eosinophilic department it sounds like they would most likely want to see me. I will be at least a month before I know anything.

Jacob's bday party went well. We had 9 boys over for a slumber party. We roasted marshmallows and made smores in a homemade fire pit in the back yard, they played outside a lot, we took them to McD's for breakfast and then to Ritter Springs Park for a hike. I think they all had a lot of fun and it was nice for us to get aquainted with Jacob's friends.

Emalee also turned 3 years old this past Monday. We didn't do a big party, just had the grandparents and Uncle Corey over for cake and ice cream. She got some clothes, puzzles, and other various toys. She also started preschool this week. She'll go 1/2 days Tuesdays and Thursday mornings.

Today I've made 4 lbs. of taco meat, 4 lbs. of shredded chicken and a crock pot full of applesauce.

Here's the applesauce recipe:

10 apples, peeled, cored, cut
1/2 C. water
1/2 C. white sugar
1 tsp. Cinnamon

Put in crock pot on low 8-10 hours, or high 4-5 hours.
When cooked take out, puree in the blender. Let cool and eat up. You can freeze this too.

My friend, Ruth let me know that she cooks up chicken in advance in her crockpot. Here's her recipe for lots of shredded chicken:

Put chicken (can be frozen or thawed) in crockpot up to the top. Put in one can chicken broth and cook on low until chicken is done. Take out, shred or chop and freeze for future dinners in freezer bags. This should make cooking dinner a bit faster on one of those busy nights!

A Full Plate

My plate is quite full this week. I have a lot of things going on...so much that I had to write a list so I don't forget anything this week. Speech therapy, Early childhood appointment, bunco, birthday party, another birthday party (both for my children) and basketball tryouts to name a few. Whew...it's gonna be a busy week!
Probably the most major thing is that I go to St. Louis this week to see a new doctor about my autoimmune disorder. I admit that I'm feeling a bit uneasy/anxious about this visit, however, I know that it has to be done. Brian and I will drive up there Wednesday night and spend the night. My appt. is early Thursday morning. I'm not sure what to expect at all and I REALLY like to know what to expect. At this point I just have to trust that the Lord knows...and it's okay!
If you read this blog (I have no idea who actually does), then would you please pray for me? Pray that the Lord would calm my nerves, that my new doctor would understand my disorder, and that I would finally get some kind of treatment that helps. Pray that Brian and I would have wisdom in making decisions that might need to be made too. Thanks!

Hello friends! As many of you know, I have a Dr. appointment this Thursday morning at St. Louis University Hospital regarding my autoimmune disorder (Hypereosinophilic Gastroenteritis). I must admit that I'm just a bit nervous and apprehensive about going. At the same time I'm excited that I get a second opinion about treatment for my disorder. Those of you that are in my immediate circle of friends know that my disorder is EXTREMELY rare and there is very little study on it. I am asking for you to pray that this new doctor that I see actually knows something and has experience in this area. If after this appointment I feel like he doesn't know how to treat me I have already sought out another option but it would require me to go to Cinncinatti for a 3 day stay. The good thing about Cinncinatti is that they are the BEST place to go in the entire world for my disorder. I am sending this note asking you all to pray for me. I really don't know exactly how to express exactly what I need prayer for...there are so many factors that play into this! Here are a few of the requests that I have: 1. Pray that the doctor is St. Louis has experience in dealing with my disorder and knows proper means of treatment. If not, that he would be willing to refer me to Cinncinatti. 2. Pray that if I'm not properly diagnosed already, that I would be properly diagnosed. There are many tangents in this disorder that require different means of treatment. 3. Pray that whatever course of treatment is prescribed that I would be willing to handle it! This is sometimes difficult physically as well as emotionally. 4. Pray that I would remember that the Lord has me on this path for a reason and to be grateful for it. 5. Pray for Brian. He's a great husband and I'm sure this is worrying him too. A few of you have asked how my Dr. appointment went. I'm going to be honest when I say that I was not happy with the appointment. Without going into too much detail Brian and I both felt that this doctor wasn't knowledgeable about my disorder. He has seen only 3 other patients before that have EGE. We could tell by some of the things that he proposed that he really is inexperienced in dealing with this particular disorder. So, I decided to call my doctor (Dr. Grant) here in Springfield. She is out of town but her nurse spoke with me today. I told her of my disappointment and concerns. I also shared with her that I would like a referral to a specific doctor that DOES deal with EGE in Cincinnati and that I most likely won't see the St. Louis doctor again. Dr. Grant will be back in the office Monday and probably call me then. The nurse seemed rather postive when I brought up the Cincinnati topic and stated that she thought Dr. Grant would consider the referral.Would you all PLEASE lift this up in prayer? This is where Brian and I both feel that I would get the best treatment. This is where people all over the world go for treatment of EGE and the only place in the world that is actively researching EGE. I already contacted them and they are willing to review my records with a referral. I really don't know where else I could get the proper help that I need. I'm having a hard time swallowing some of this today so please continue to pray for me too that I would rest in the Lord and completely trust in Him. FLU!!!!!!!!!

The flu bug has hit our house in full force. David's on his 4th day of it. Poor kid...he had 102.6 fever for 2 days and now he's in the 99's. Brian got it too but is handling it much better than David and seems to almost be over it.


I'm staring to cough just a little bit, but nothing else really. I woke up this morning really tired and sore, but really my symptoms are only those. I just knew that by now I'd really be sick....but nope...not yet. Jacob's skipped out too so far. Emalee had a slight fever for one day but nothing else either. I pray that this is all we'll get!


I got to be a solo parent at Open House last night for Jacob, but it was nice to get out of the house for a bit. He's doing great in school and I was really impressed with his work. He made a cookie shaped like North America. I was going to take a picture of it but Brian ate Florida before I had a chance! My neighbor took a picture though so maybe I can get her to send it to me.

I went and rented about 5 movies since we're all cooped up too. I had always wanted to see the "Jesus Film" and Blockbuster actually had it. I think that will be "church" for us tomorrow. I sure don't want to pass this stuff around!


Today I Lysoled the entire house and washed bedding. I also have the windows open since it's so nice outside. I figure some fresh air will do us all some good :)

The leaves on the trees are turning beautiful shades of oranges, yellows and reds. I really wanted to take a walk today, but maybe I'll do that tomorrow. I LOVE autumn and everything that it brings...bon fires, s'mores, everything flavored like pumpkin...I plan on enjoying every bit of it! One of my fondest memories of being a kid is building forts with my siblings out of the fallen leaves and eating pears off of our neighbors tree. I always wore my favorite red shawl too. I wish I could find a red shawl today...they were so cozy!

How to live on Beans and Rice for a week!

I found a great post this morning on moneysavingmom.com that showed different ways to cook beans and rice. Just think of the money you'd save eating this for a whole week! I'm not sure if Brian and the kids would be able to handle this many beans for dinner, but I also wonder if they'd even notice as long as I varied the meals some what. I might have to try it and see ; )

More baking/cooking today!
















Well, I think I've had a successful baking/cooking day the past 2 days! Here's what I made and froze: 1 pot of chili, 2 pots of potato soup, mini meatloaves, chicken tetrazzini, Tuna tetrazzini, French Toast (enough for 2 meals), 2 1/2 dozen Pumpkin Chocolate Chip Muffins, 1 loaf Banana Bread. Not bad for a total of about 5 hours of cooking. Here's the remaining pictures of the fruits of my labor....the banana bread isn't cooked yet! It's in the oven right now!

Freezer cooking day, garage sale and fever!!!













This morning I cooked up some chili, mini meatloaves and 2 gallons of potato soup to put in the freezer for future dinners (I'll post pics). Emalee played with playdough while I cooked. I had just finished up making Emalee's lunch when I bent down to kiss her. Her forehead was burning up so I took her temperature...102.6 degrees!!! She's up from her nap (if you want to call it that) now and seems to be acting okay, just hot. I'll keep an eye on her for a couple days to make sure she's fine.
I had planned on pricing my garage sale items while Emalee napped but her nap wasn't very productive. Mostly, she rested, looked at books and sometimes whined a little bit. I would too if I were sick ; ( I guess I'll price stuff later this evening.
At least dinner's done!!! : ) Yay for freezer meals! Tomorrow I'll be making Chicken and Tuna Tetrazzini, Pumpkin chocolate chip muffins, Apple Cake, and Banana Bread and French Toast. I'll try to remember to post pics tomorrow too!

Busy September!!!

What a busy month this has been! Between me and Jacob there have been 5 doctor appointments with 2 of those requiring anesthesia. I had a gastroscopy last week and Jacob had oral surgery to remove 3 teeth this week. Also, Emalee is being evaluated for a classroom setting that will give her therapy. We've had therapy or evaluations 9 times this month! It's been difficult to get anything else done around here. We are seeing a lot of progress with Emalee's speech in the past several weeks to that is a good thing. :)
This had definitely made me stop and be even more thankful that I'm a stay-at-home-mom because I honestly don't know how I would do all of this if I worked outside the home.
It looks like October willl slow down a little bit as far as appointments go so maybe I can get some things checked off of my 'to do' list next month. I'm looking forward to all of the things autumn brings....pumpkin pie, colorful leaves, crispness in the air, walks with my hubby in the evenings and the wonderful smell that comes with the change of seasons. Even when life seems hectic, it's oh so good if we just stop and enjoy it!

Hypereosinophilic Gastroenteritis

I don't believe that I've ever posted about the autoimmune disorder that I just so happen to have. It's called Hypereosinophilic Gastroenteritis (EGE). For those of you out there that have a curious nature there are a few sites that explain what this is, symptoms, etc. I'll post some of those sites at the bottom of this entry.
Anyway, this past Wednesday I went and had another Gastroscopy. It's been determined that I have another stomach ulcer. I've been having a lot of stomach pain and have lived with ulcers for so long now that I already knew that they would find one with the scope. The ulcer, along with some of my stomach tissue was biopsied and sent off to the lab. I'm still waiting for the lab readings.
The good thing that I really want to give a praise for is that for the first time since I've been seeing my Gastroenterologist I truly feel that he is listening to me and wants to help me. He's doing some research on my disorder which I hope helps him and my Hemotologist understand how to better treat my condition and symptoms. I've been specifically praying that my doctors would do more research on EGE and it looks like that prayer is being answered.
EGE is an extremely rare condition. From the research that I've done it seems that there are only 400-600 diagnosed cases WORLD WIDE!!! No wonder research is difficult to do, huh?!?! I suppose the Lord wanted me to be unique for some reason I don't quite understand yet, but if I happen to be the guinea pig that leads to helping others that have EGE feel better than so be it!

How's the budget going?

We've been at this new budget for about 1 month and I have to admit that it's a little harder to keep than I thought it would be. Some categories are just really easy and others are really hard to stick to. The way that my budget is set up right now there just isn't any wiggle room to give until the beginning of the year, so we're really having to be very diligent in where and what we spend our money on.

When I say that I don't have any wiggle room I don't want to give the impression that we're broke. Part of our budget includes savings and pocket cash, so no, we're not broke...we're just disciplining ourselves.

There's a verse in the Bible that accurately represents the phase that we're in right now....

Dillon's Mega Event Sale 8/22/09


I've really slacked off on couponing this summer and other than perishables we pretty much just ate from our stock pile. Since the stock pile was starting to dwindle down some (especially cereal) I decided to take advantage of Dillon's Mega Event going on this week. I bought $137.72 worth of food for a total of $49.05. This was a savings of 66% as you can see reflected on my receipt. For 48 items that comes out to $1.02 per item. As you can see by my picture, most of what I purchased is snack food or cereals. With the kids in school taking lunches and needing after school snacks this sale was just perfect to stock up on! Here's what I got:

Dinner menu for the week

I've had one of those weeks where nothing has worked out quite like I had planned. My appointment Monday was delayed by about two hours resulting in the rest of my day being about two hours off! Yesterday I forgot to pick up my kids from school ; ) I guess with the start of the new school year and some confusion on my part...at least that's my excuse. My first 2 days have pretty easy meals because of that. Hope you're week started better than mine.

Tulsa vacation pics





































After Korea camp ended Brian and the boys drove down to Tulsa to meet Emalee and I. Our family vacation began. I thought I'd post some of our pics that we took. We went to the Oklahoma Aquarium and to the Tulsa Zoo. We also enjoyed just staying at our hotel and swimming in their indoor water park. They kids had great fun and so did we!

Are any of you Dave Ramsey fans? I've heard a lot about him for the last several months. A good friend of mine just finished taking his class, Financial Peace, and is letting me borrow her materials. Brian and I have been listening to one CD every evening after the kids go to bed. We've learned a lot.
Anyway, as I mentioned in my last post, we're starting a new budget. I've always had some sort of budget, but nothing at all that comes close to my new one. We've also started using the "envelope system" as part of this budget. That's where you take cash and put it in an envelope and only use what's in there for that certain category of the budget. This keep the lovely debit card from tempting us from spending more. Not only that, but we actually know how much is allowed to spend on certain items. I really think this will be a good thing.
We have a goal to be DEBT FREE in the next 3 years except for our house. Barring no major catastrophe's I think this is very possible...maybe even sooner than 3 years. As we get closer to the goal I'll keep updating on here. The only thing that will be hard is actually sticking to the plan! If we can keep our eyes on the goal, I think we can do it!

A no-computer week....not by choice...

Well, my computer monitor finally bit the dust! I haven't been online in several days. Do I miss it? Yes, but not as much as I thought I would. The boys start school next week, they had dentist appointments this week and we've also been getting the clothes and school supplies bought this week. It's been a busy time! On top of all of that we decided to refinance our mortgage and the appraisal was today.

We have a friend that's giving us a monitor so hopefully we'll get it soon and be back up online. Until then....I'm checking out! I'll leave you with the things that I've done or will do this week....

Korea Camp


Last Thursday Emalee and I headed to Tulsa, OK. for our adoption agency's annual Korean Heritage Camp. This was our first year going and I was really looking forward to it. The first day was a little rough for me because I had been diagnosed with pneumonia/bronchitis just a few days prior and still wasn't feeling very well. I was still coughing a lot and a little tired, but decided to buck up and go anyway.



The first day there was really nice. I finally got to meet the 5 other mom's that I've been chatting with all these years. We all met for dinner, had a surprise baby shower for one of them and surprised another with a special gift. It was also so nice to see all of their little ones that we all have prayed for while we waited together, traveled and finally brought home!

I helped out the first day in the 4th grade class made up of about 24 kids. Although I was a little apprehensive about this, it worked out really well. All the kids seemed to really enjoy themselves and it was nice for me to see that they have really adjusted well and are happy. We had 3 teenage helpers in our class that were all boys. I actually enjoyed getting to know them the best. They were smart, funny, and very talented in various areas. They were great helpers and did a great job keeping order in the class and helping to look up our history characters that we were reporting on. As far as race/heritage goes it was interesting to see all the little Korean's walking around. I was definitely in the minority!



Saturday morning was the Birth Mother Seminar. Two Korean Birth Mother's that gave their babies up for adoption were guests at this years camp. Neither of the mother's gave birth to any of the children that attended camp. They each told their adoption story so I'll try to summarize what I remember to the best of my ability.



Birth Mother #1 was young. She looked like she was in her early 20's. She had broken up with her boyfriend about two months prior to finding out that she was pregnant. She called her now ex-boyfriend to tell him of her pregnancy and he told her that she needed to terminate the pregnancy. The mother went in for this procedure and was given an ultra sound. She said that when she heard her baby's heart beat she knew that she couldn't have an abortion and would keep her baby. As the months went on she was unable to stay at home. Her mother said that she would be a bad influence on her younger brother. She eventually wound up going to Esther's Home. (Esther's Home is a place that houses young pregnant mother's and gives them counseling among other things throughout their pregnancy. Brian and I got to visit Esther's home and even ate lunch with a few of the pregnant mom's while we were in Korea. The nursery where Emalee stayed at is also in this same building.) When the mother gave birth to her baby she stated that she wanted to keep him. After talking with her mother the decision was made to give the baby up for adoption. She talked about her grief and how she has suffered with depression. She said that she dealt with her grief by going to church to pray. She said that sometimes prayer works and sometimes it doesn't. She also said that she wanted to kill herself. The most touching part for me personally was that she said that when she feels like killing herself she will go check her baby's adoption file and sometimes there will be pictures or a letter from the adoptive family and then that makes her feel better. From what I understand, she finally has decided that to better herself educationally and by trying to live a good life she will be doing what is right for her baby. On a side note, from what I picked up on this mother's baby is just a few months younger than Emalee. The birth mother was most likely at Esther's Home while we were there getting Emalee.



Birth Mother #2 was much more emotional. She cried a lot when telling her story and is 33 years old. I never could determine how old her baby is.
This mother lived alone and became pregnant. She didn't know what options she had so she decided to keep her baby. The incredible part of her story is that she delivered her baby by herself at home. She did her best to take care of her baby and continued to work. When her baby became sick she knew that she had to do something. A friend suggested that she look into Eastern adoption agency. Because of the translation and language difficulties I couldn't tell if she stayed at Esther's Home but she did decide to put her child up for adoption. She said that she bathed him the night before she took him to the agency and held him all night. She also told of how she held him in one arm while she signed adoption papers with the other. Like the first mother she told of her depression. She said that she first turned to food for comfort, then to alcohol. She also stated that she wanted to die. She is now counseling other women going through these same issues.



As you can imagine, most of us adoptive parents sat there with tears in our eyes throughout the entire seminar. I can't imagine the courage that these two ladies had to speak in front of us. I also sat amazed at God's handy work. I could see where He is actively working in the lives of both of these ladies and making Himself known to them. I'm sure that coming to America was a tremendous trip for them....to be in the same country that their children are in had to be of some comfort to them. I'm amazed at how He intervened in the lives of these babies by using technology to get them to choose life! I'm also so glad that He taught me a few lessons by listening to them speak.



The birth mother's were asked "what should adoptive parents tell their children about their birth mother?" There is a notion in Korea that children who are placed for adoption have been abandoned. They said over and over that they "didn't abandon their babies, that they love their babies; they did it because of love, in the best interest of the baby." Over and over they talked about how much they love their babies.

There's so much more that I could write about this seminar but I'm running low on time this after noon. I'll continue with a few more thoughts in an upcoming post.

WE'RE GOING TO KOREA CAMP!!!

I'm so excited...Tomorrow morning Emalee and I are heading to Tulsa, OK. to attend Korean Heritage Camp provided by our adoption agency. This will be our first year attending. Camp is a really neat experience, not only for the adopted children, but for their siblings and parents as well. Campers get to experience several different area of Korean culture. There are games, crafts, history classes, etc. that are taught. It's all led by parent volunteers. I'm helping in the Famous Korean's History class. Emalee will be in the nursery during the times that I teach and during a class that I'm taking.
Parents are offered a few classes to take as well. I can't remember all of the classes, but I do remember that there's a Korean cooking class offered. I wish I could take it, but couldn't work it into my schedule. I am attending a seminar led by two Korean Birth Mother's. They'll be talking about their side of adoption, share their adoption story, how they think, what they feel, etc. I'm sure that will be very interesting and eye-opening to us adoptive parents. This will be their first time in America...the place that their children are now living. It's sure to be quite an experienc for these two ladies as well.
When I was in the adoption process I was on a forum through our agency. Six of us mom's decided to break off the forum and start our own little group. We've emailed eachother EVERY day since mid-2004. We've grown very close to eachother during this time. It's been nice to have other mom's to talk to about issues that sometimes other people just wouldn't understand. I got the opportunity to meet one of my friends as we both traveled to get our babies at the same time. I've never met the other four. We're all getting together on Thursday evening for dinner and a visit. I'll be rooming with one of them and her daughter too. This is probably the most exciting part of the trip. To finally meet my dear friends in person.
Please pray for travel safety for us. I haven't traveled by myself w/a little one that far in quite a while! Also please pray that Emalee will be a good little girl while we're there and gets her sleep when it's time : )
Saturday evening Brian, David and Jacob are driving down to meet up with us girls. We're going to have a mini-vacation in Tulsa and return on Monday evening. It sure to be a weekend full of fun!

Thoughts for this week

A Friend Sentiment

I was thinking about my blog last night when I was laying in bed. I try to write about things that are important in my life. It dawned on me that I've been incredibly blessed with a huge amount of friends and I just wanted to mention some of them on here today in no particular order!
Lisa K.~ You've been my friend for 18 years and have seen the good, the bad, the ugly...thank you for the faithfulness you've shown in our friendship. The thing I'll remember most is when you dropped everything and came to see me (3 hours away) when I went into pre-labor with the boys. I didn't ask you to do that! I opened my eyes in my hospital room and there you were! You're an incredible prayer warrior!
Tina D.~ I've known you since 7th grade! You put up with me being your roommate for awhile in college...those were good times! Thank you so much for the clothes that you give me for Emalee. I know I've told you, but I really do appreciate it! Thanks for taking time out of our schedule every summer to visit w/me.
Stacy P.~ You tell it like it is, you shoot straight with me and keep me accountable! Thank you for your honesty and trustworthiness. Thanks for forgetting things that I tell you... LOL!!! We have a lot in common. I love your kids and I think you're one of the best mom's I know!
Kristin C.~ Although you're so much younger than me you are so mature in so many ways...far beyond your years in certain areas. I've seen you go from an engaged young woman to a married mom of 2! You're a great accountablity partner too and I appreciate your honesty. I love watching you grow in the Lord.
Kelly P.~ You were the first to know about Emalee. Thank you for keeping quiet while we prayed. It's been fun watching the Lord bless you with 3 babies! I think it's so sweet that Emalee and Natalie are friends....the two babies that we prayed for : ) God is good!
Hannah S.~ What can I say? This has been an interesting year : ) Watching you figure things out and turn back to Truth has been an incredible blessing. You give us all hope that things will work out if we follow Truth! I'm so proud of you! Your bubbly spirit keeps me happy!
Michelle F.~ Last, but not least! This past year you have been a great friend to have. Although I've known you for several years (maybe 16-17???) I never realized that we would become good friends. Thanks for carrying me along these past few months. When Kara died I lost a great friend, but you stepped in and I realized that I gained another! More groceries

I know that I said yesterday that I wasn't going to buy anything else, but a very good friend of mine gave me a load of coupons Sunday. I hadn't had time to go through them until today and boy am I glad that I did. I got bunches that work for the Dillon's Daytona Sale that ends today! So, I figured out my list and went ahead.
I spend $27.51 ($4.50 was my moms) I didn't take a picture this time, but here's what I got:

2 Land O Lakes spreadable butter
4 Betty Crocker Fruit roll ups (preparing for school luches already)
2 Manwich
3 ChefBoyRDee Ravioli
10 Koolaid packs
1 pack of sugar (free w/koolaid purchase)
1 A1 Sauce
4- 1/2 gallons of milk (marked down to 1.25 each)
1 Kraft BBQ sauce (free w/coupon)
1 Digiorno Flatmelt (free w/coupon)
5-12pks of Coke ($1.60 each after coupons)
I also got Catalina coupons back for $3 off my next purchase, so.....
I'm going back later this evening and getting 5 more 12-pk Cokes which will wind up being $1 each after coupons and the Catalinas!
So today a total of about $28.00 spent! Well below my $40 budget!

What's for dinner???

I made up my menu plan for this week's dinners. I don't have to grocery shop for any food this week except milk and I would like a little fresh fruit. I also need toilet paper. That's it! I'm trying to use my stockpile of food up so making a menu really helps to keep me on track.
Here's what's for dinner for Monday-Friday. I figure that we'll have enough leftovers for the weekend.
Sunday: Subway w/friends
Monday: Foil Packs w/rice and salad
Tuesday: Breakfast...pancakes, bacon, sausage, eggs, hashbrowns
Wednesday: Pork Chop Supper, rice, veggie, salad
Thursday: Spaghetti, garlic bread, veggie
Friday: Homemade Pizza
Saturday: Leftovers

Foil Packs:
Take 1-2 lbs. ground chuck, round or turkey, crumble into individual foil packs, fill with desired veggies (I use onion, green pepper, carrots, celery, green beans, etc.) Season w/salt and pepper (sometimes I add a little soy sauce for flavor). Fold foil pack tightly so they don't leak. Place on hot grill or in oven and cook until done. You may want to lightly oil the inside of the foil so that food doesn't stick.

Pork Chop Supper:
4 pork chops
2/3 c. long grain rice
4 T. chopped onioin
2 tsp. instant chicken boullion
1/2 c. chopped apple
Brown chops in small amount of oil in skillet. Remove chops and set aside on plate. Add rice and onion to oil and cook until slightly browned. Add 2 c. water and bring to a boil. Stir in apples. Arrange chops on top. Cover and cook 20-25 minutes.

Renewing my mind....

One of my favorite verses in the Bible is Romans 12:2...

"And do not be conformed to this world, but be transformed by the renewing of your mind...."

On days that I'm struggling with issues whether they be spiritual, physical, emotional, etc. I try to remember that verse. It's helps me to refocus on what really matters and gets my mind off of myself and back onto Christ.

I wasn't planning on getting the ground beef, but the Kraft cheese singles has coupons on them for $1 off my ground beef purchase....score! Also, I wasn't planning on getting the mac & cheese, but those boxes had FREE Capri Sun coupons attached to them! They also qualified for the $3 off my order since I bought 10 of them!

Bargains of the day...

Milk...seems like we never get enough of it around here and have to replenish our supply every few days. With 3 growing children it's no wonder why! Well, since I'm on this frugal adventure I really didn't want to spend much today, but we only had about a cup of milk left. I decided to use my Walgreens Register Rewards to buy milk with. I had $8 dollars in RR's to use so here's what I got:
2 gallons milk $2.79 each
2 pkgs. chips ahoy cookies 2/$5
Total = $10.58+ tax
Used $8 RR
Paid $2.99 (including the tax) out of pocket
Received a $3 Register Reward (for buying 2 cookies and 1 gallon milk)
Actually made .01 cent after using and receiving RR's !!!

Another great deal going on here in town this week is at Price Cutter. Unfortunately, the sale ends today, but I was able to snag a total of 8, 56-oz. Hiland ice creams for only .42 cents a piece! I actually have 6 more coupons and may go back tonight.
The ice cream is on sale for .97 cents and http://www.hilanddairy.com/ has .55 cent coupons. You'll have to register to access the coupons. What a great thing to stock up on for the summer! Funny thing is this...I'm allergic to milk, which includes ice cream, but my husband and kids are thrilled with this delicious snack!
I spent $3.36 + tax on 8 containers ice cream.

Note: I love how the Lord provides...even for the fun stuff!

Dillons trip May 26, 2009


I was so busy over Memorial Day weekend that I forgot to go to Dillons this week. I realized that yesterday was the last day of this particular ad and I had coupons that would make many of my items free. So, you know what I did, right? Yes, I hopped in my van and took off to Dillon's. Brian is now convinced that I'm NOT crazy when I do this! Here's what I came home with.


1 LoftHouse Cookies (my only splurge and not on sale) $3.49

(Everything below is the sale price)
4 Mentos gum $1 each

4 Dial pump hand soap $1 each

3 Johnson's Bath Buddy soap bars .99 cents each

1 Suddenly Salad $1.50

4 Country Time Lemonade $1.88 each

2 boxes of 4-pack Smart Balance 50/50 butter spread $2 each

3 Weber grill spice packs .79 cents each


Net Total= $29.88 after sale prices

Net Total= $44.34 before sale prices


What I paid after sale prices and coupons= $8.10 a savings of 81%

There were 22 items

I paid an average of .37 cents per item


On a side note: last week Dillons had Oscar Meyer Bologna on sale and with my coupons I was able to buy a whole case for $6. I did this the previous week with Oscar Meyer Hotdogs and paid $6 for a whole case of them too. These freeze well and will be used this summer with my kids home from school or cookouts that we have. There are 12 packs per case.

CVS and Walgreens 4/26/09

I had a great day at CVS and Walgreens (Wags) today...my best trip ever. I went to CVS before Sunday School and went to two Walgreens (on the same street) after church while Emalee napped. Everything in the picture only cost me .63 cents out of my pocket! Can you believe that?!?!?! Here's the details of today's shopping trips.



CVS:

2 Crest toothpaste $1.99 each
1 RightGuard deodorant $2.84
2 Trident Gum .97 cents each
3 Tresemme hair care products $4.99 each

Subtotal before coupons = $23.73
I had $6.25 in coupons
I used $16.89 in ECB's
This brought my subtotal to .59 cents + .04 tax
Total = .63 cents out of my pocket
I also got $7.00 Ecb's for next time and still have some that I've not used yet.



Walgreens trip #1:

3 Nestle Flipz $1.50 each
2 Got2B hair products 2/$10
2 Ecotrin aspirin $2.00 each
1 Cadbury egg .12 cents
2 cream eggs (generic brand) .08 cents each

Subtotal before coupons = $18.78
I had $7.75 in coupons
I used $7.00 in RR's (Register Rewards)
This brought my subtotal to $4.03 + .18 tax
Total = $4.21

I paid the total with my Walgreens gift card from last month's rebate items
So...nothing, zip, zero, out of my pocket! I also walked out of the store with another $7.00 in Register Rewards for my next trip!




Walgreens Trip #2:

1 Nivea body wash $4.99
2 Ecotrin aspirin $2.00 each
1 transparent tape .58 cents

Subtotal before coupons = $9.57
I had $3.25 in coupons
I used $5.00 Register Reward
This brought my subtotal to $1.32 + .09 tax
Total = $1.41

I again used my Walgreens gift card and paid nothing out of my pocket and walked out of the store with another $7.00 in Register Rewards for my next trip!

3 boxes CVS facial tissues~~on sale buy 2 @ 1.29 get 1 free~~minus $1 Q = $1.58 for all 3 boxes!

2 bottles Pantene~~ 2/$7 minus two $1.50 Q's

2 bottles Pantene style product~~ Q for both free w/purchase of the above Pantene

2 bottles Pert Plus~~2/$5~~ minus two $2 Q's = .50 each

Total = $35.84
Total after Q's and ECB's = $15.61
ECB's earned = $ 15.48

Note: My goal is to spend much less than this out of my pocket. However, I really needed shampoo and Pantene is my favorite brand. I really didn't want to miss out on that deal! With $15.48 in ECB's now I hope to roll them to spend less than a few bucks next time I go.

I didn't think that this week's Walgreen's deals were that great. To keep my Register Reward's (RR's) from expiring I decided to buy the following items to "roll" my rewards.

I figured out some of my shopping trip for this coming week's ads. Here's the summary of what I'll be getting and spending. If you read this yesterday you'll notice that I had to change some things. Our CVS didn't carry the one item I really wanted, I added meat to my Dillon's trip and I added Robitussin to my Walgreens trip.

Dillon's: (I really don't need groceries due to being stocked up so I'm just getting the deals this week and a little bit of meat.)

Emalee's 2nd Gotcha Day!!!

Today is Emalee's 2nd Gotcha Day! I can't believe that it's been 2 whole years since I was handed a beautiful bundle of Korean baby girl joy to take home! We waited 2 1/2 years to get to that day...it seemed like an eternity!
I was thinking this morning of how our wait seemed like forever. There were so many friends that stood by us encouraging us the whole entire process. There were also many people in our life that just didn't understand why we were adopting a child at all...especially when we had two kids already. They also didn't understand why in the world we'd go to another country to adopt.
There was one particular day when I was feeling somewhat discouraged after some negative remarks that I had heard concerning our adoption. I knew in my heart that the Lord called us to adopt. I knew in my heart where our daughter was. I knew in my heart that this was real, but so many voices kept saying things to the contrary.
It's amazing how in times like these the Enemy comes in trying to "kill, steal, and destroy" God's perfect plan.
As I was driving home that day, I turned the radio on 88.3 The Wind FM. All of the sudden I heard the most beautiful words....

"...and the voice of Truth tells me a different story, and the voice of Truth says do not be afraid, and the voice of Truth says this is for My glory...out of all the voices calling out to me, I will choose to listen and believe the Voice of Truth." ~Mercy Me "The Voice of Truth"

Wow! Just what I needed and just at the right time the Lord spoke reminding me that His voice, His Word, is the Truth. It's the only Voice I'm to listen to and obey. What a comfort to have Him speak Truth over me, confirming in my spirit what He had previously instructed me to do. He's such a good God!

I pray that as Emalee grows up into a young lady that she can look back and see a beautiful tapestry that the Lord has made of her life and I'm so grateful that I get the priviledge of being a part of it!

Some of my March '09 freebies

Just thought I'd post a pic of my most recent freebies. All these were purchased at Walgreens with only two trips. Everthing you see here was free except the napkins which were .25 each (I actually got 3 napkins, but I've already opened a package that's not pictured.) A grand total of .75 cents plus tax! At full price all this would have costs around $100.00.
